Saw your post on the BBS but it wouldn't let me reply... probably reached the end of my talking crap limit for this month..
I did my last walnut stock with a mix of boiled linseed and tung oil, this gives a gloss finish if enough coats are applied, i believe tru-oil does the same.? If you want real high gloss then lacquer is the way to go, BUT, it is not as easy to keep looking new unlike an oil finish.. quick rub over and on with more oil. Lacquer will need more preparation and work to get the gloss finish back.
If the stock has been oiled/waxed before you add lacquer you're in for quite a ride...
My laminate stock took weeks and three trips into the spraybooth to get it to look like it does.. and that was bare wood.
If you do go down the lacquer route, then two pack is the best, not something i'd recommend anyone to try at home. Professional application only.
