I would opt for the "30" option.

It has been very successful so far and I think the time element of a "40" shoot would start to detract from the enjoyment. As already said, waiting around for the start of the second session would be extended quite a bit and it the weather isn't great wouldn't make for a good experience.

If courses have to be more difficult (concentration) this could be achieved by either including more reducers or extending the distance they can be placed at.
