Always aim from centre, make allowances from centre.

As Neil says you get an idea of wind strength and drift on the day. I don't know a human being on planet earth who could accurately tell the difference in 9mph and 10mph

As Lee has said get out and practice, buildiup a memory bank of what a particular wind and how it feels and its direction in relation to the target can and does move your pellet
