The wind applies a force initially but that force decreases as the pellet lateral speed matches the wind speed at which point it is a zero force but the body moves then as if part of the wind. The math would be the same as a pendulum i.e. starting out with zero lateral velocity it builds up a speed which is a maximum when it reaches the bottom of the arc (and decreases on the way back up which is the same when the ruddy wind is coming from both directions on a course - the evil "S" shape the target string takes some days hahahaha).
